Grandma's Potato Salad


Sunday could easily be one of our busiest, yet most relaxing days. Tonight was one of those nights where we were all too tired to accomplish cooking anything significant for dinner. Perfect night for grilled cheese and potato salad. This recipe is such a favorite with our family that it does not matter how much I make, there never are any left overs.

Potato Salad:

Serves: 10+
Prep Time: 30 minutes
Total Time: 1-2 hours

Ingredients:


  • 5 lb. bag of potatoes
  • 6-8 eggs
  • 1 yellow onion
  • 16 oz jar of Mayo

Boil potatoes and eggs until potatoes are soft enough to poke through with a fork, but, firm enough that the potato will not fall apart.

 Rinse in cold water. The cold water will help make it so the eggs are easier to peel. Put the eggs in a separate bowl and place them in the fridge until it is time to peel them.

Dice the onion.

Cube the potatoes.

I find it easier and quicker to slice the potatoes length wise. Large cubes are ok.

Peel the eggs, add the yolks to the salad, and dice up the eggs whites.

Add mayo, chill for 30 minutes, and serve!

While we love this salad as is, it is very easy to modify. Some ideas are
  • Use mustard instead of mayo, or half mayo half mustard.
  • Add paprika, garlic salt, celery salt, or black pepper to taste.
  • Add celery or sweet relish.
